I am Andrew Soddy, Executive Head Chef at L'Horizon Beach Hotel & Spa I hope you enjoy making the ‘Pumpkin Souffle’ as it is delicate and light, but has the creaminess of the pumpkin flavour coming through at the same time.
This month I wanted to share a recipe that really embraced Valentine's Day, so I have the perfect recipe to share with your partner on 14th February.
300g whole baby Brie or Camembert
3 tbsp maple syrup
3 tbsp soft brown sugar
Crusty bread, to serve
Remove any plastic packaging from the cheese and return it to its wooden box.Place on a baking sheet and cook in a preheated oven, 200ºC (400ºF), gas mark 6 for 15 minutes.
Meanwhile, toast the pecans in a small frying pan for 3-5 minutes until lightly browned then set aside. Put the maple syrup and sugar in a small saucepan and bring to the boil. Cook for 1 minute until foamy.
Take the cheese from the oven and cut a small cross in the centre. Drizzle over the maple syrup, scatter with pecans and thyme then serve with plenty of crusty bread and olive. The perfect way to share.
