This is our New Hall Health Club & Spa Manager’s favourite meal of the week.
It’s so easy!
Serve with lime wedges and crème fresh, or just on its own with tortilla chips, rice or potato wedges. Delicious!
• Olive Oil
• 2 Onions
• 1 Red Pepper
• 2 Fresh Chilli’s
• Garlic (fresh or paste)
• Ginger (fresh or paste)
• Fresh Spinach (optional)
• Harissa Paste (1-2 teaspoons)
• Oregano (2 teaspoons)
• Paprika (2 teaspoons)
• 1 large can of tinned chopped Tomatoes
• 1 tin of Chilli Beans (or your choice of beans)
• 1 tin of Sweetcorn
• Optional Mushrooms, Couchettes, Sweet Potato etc
Chop garlic, ginger and chillies and pan fry with olive oil (use large pan or transfer into slow cooker)
Add diced onion
Use a blender to mix the spinach, one teaspoon of harissa paste and two teaspoons of Oregano and Paprika (add or reduce spices depending on taste)
Add a generous splash of water to the blended mix and then add all into the main pan
Add in the tomatoes, sweetcorn and your choice of beans
Bring to the boil and then simmer for around an hour mixing at intervals
