Why not make this wholesome chicken dish for dinner

Ingredients

2 skinless chicken breasts
Cajun spice x to taste
1 red onion
1 yellow pepper
1 courgette
100ml Greek yoghurt
120g couscous 
10ml olive oil
10ml vegetable oil
1 lime 


Method 

Prepare the Couscous 
Pour 240ml of boiling water over the couscous. Add 10ml olive oil, salt and pepper, cover with Clingfilm and leave to one side

Prepare the Chicken 
Rub the Cajun spice all over the chicken breasts with a little oil and salt, chargrill or pan fry both sides until golden brown, then put in the oven at 150/160 degrees for 7 minutes

Sauté the Vegetables 
Dice up your red onion, yellow pepper and courgette in roughly 1cm squares. Take your frying pan and add a little vegetable oil and heat. Add your onions and sweat them down for 2 minutes then add the yellow pepper and cook for a further 2 mins. Add your courgette then cook for a further 2 mins and season. Add the couscous to your pan to warm. 

Lime yoghurt
Zest and juice the lime and mix into the Greek yoghurt

Build your dish
Take a large plate or bowl and transfer your couscous and vegetable mix in the centre, then remove chicken from the oven, calve the breast into 3 pieces and plate on top of the couscous, using a spoon to drizzle your yoghurt over the chicken and couscous. 

Serve!
