The Pavilion is run by Tony Leck, who hails from Cumbria but made his home in Guernsey in 1987, having moved here as a young pastry chef. Inspired by the relaxing pace of life, he worked hard at extending his culinary knowledge at a variety of establishments and settled at St Pierre Park in 2012.

He cites the use of local and seasonal produce as the secrets to great cooking, as well as fuss-free techniques that let the food speak for itself. The results of this philosophy make St Pierre Hotel a must-visit destination for anyone who appreciates fine dining.
