Preparation method

For the pigeon:

1. Trim Pigeon down by removing head, knuckling the wings & legs, then crown the bird leaving breast & wing on bone, exposing the liver & heart for use in the sausage roll later.

2. Remove leg/thigh together & pull guiders/sinew shaping into drumsticks tightly in tied cling film, braise these until nearly falling from bone.

3. To serve the breast, it should be cooked at 180˚c for 8 minutes, then rested before carving off bone & the drumsticks reheated in Veal jus, napped for high glaze.


For the Sausage roll:

1. Blend down pigeon breasts with the cream & pass through drum sieve.

2. Mix in chopped livers, hearts and bacon fat.

3. Season with Espelette & rose sel.

4. Roll out puff pastry as thinly as possible, layering Parma ham on and piping mixture.

5. Form into sausage roll sealing a slight overlap with egg wash and glazing.

6. When chilled slice into 3" portions.

7. Cook from fresh for approx 7 mins @ 180˚c – according to size of roll done.


Presentation

1. Garnish with white bean & truffle puree, wilted spinach, broad beans, sautéed Girolle, Elderberry dressing, sesame salt.

  • 5 pigeon breasts.
  • 100ml whipping cream.
  • 5 pigeon livers.
  • 5 pigeon hearts.
  • Fat from 5 bacon rashes.
  • Espelette pepper.
  • Rose sel.
  • Parma ham.
  • Puff pastry.
