Consomme of slow roasted summer tomatoes with sweet basil (V)

Chilled ceviche of scallops, pea puree, pea tendrils and sweet pea sorbet

Pressed terrine of ham hock and Nutfield garden herbs, capers and salsa verde

Potted brown shrimps with cayenne crispy pork and soda dough

Guacamole pannacotta, red pepper jelly and aged parmesan biscuits (V)

Main Course

Roasted sirloin of Sussex beef with Yorkshire pudding and pan juices

Olive oil poached organic salmon, cauliflower beignets and young spinach

Slow roasted breast of local lamb with lemon thyme, crushed garlic and sherry

Open polenta lasagne with garden herbs, pickled mushrooms and confit leeks, cepe powder and summer pumpkin (V)

Slow poached hake, tempura squid with cuttlefish bisque and saffron linguine

Dessert

Clotted cream pannacotta, macerated strawberries, basil sorbet

Dark chocolate mousse, passion fruit sorbet, pecan praline crunch

Classic lemon tart, loganberry water ice, lavender grutine

Brown sugar meringue, Madagascan vanilla creme, blueberry compote, boysenberry granita
