Crêpes Suzette,

Crêpes Suzette is a French dessert consisting of a crêpes with a beurre Suzette, a sauce of caramelized sugar and butter, orange juice, zest and Grand Marnier or orange Curacao liqueur on top, served flambé.

For the crêpes,
  • In a bowl, add the flour and eggs. Then gradually add the milk while mixing with your whisk,
  • Add the vanilla sugar, pinch of salt,
  • Leave the batter one hour if possible,
  • Heat a frying pan, once hot, add a little bit of butter to grease the pan,
  • Pour half a ladle of your crêpe batter and cook 1 to 2 minutes per side,
  • Here is it. Your crêpes are ready.
For the Suzette butter,
  • Make small pieces of butter and place in the bowl to be placed in a bowl containing hot water, the goal is to soften the butter,
  • Make zest with the oranges and the lemon,
  • Press the oranges and the lemon and mix it with the sugar to get a syrup,
  • Mix then the syrup with the melted butter and the zest.
Ingredients
For the crêpes,
  • 250gr x flour,
  • 4 eggs,
  • 1/2 litre of milk,
  • 50gr x butter,
  • 1 pinch of salt,
  • 15gr x vanilla sugar.
For the Suzette butter,
  • 2 x oranges,
  • 1 x lemon,
  • 125gr x butter,
  • 50gr x sugar,
  • Grand Marnier.
To serve,
  • Put a little bit of the butter into a pan. Place the crêpes, one by one. Fold them in four. When all the crêpes are into a pan, add the Grand Marnier and set it on fire,
  • Serve then the crêpes.
