About our chef - Adam Fargin


Adam Fargin joined Audleys Wood Hotel in August 2011 to launch The Simonds Room restaurant. Adam is not new to challenges in his career, featuring in many competitions such as a Finalist in BBC's Master Chef the Professionals, Winner of the Jacquard Rising Stars Trophy (now on show in The Simonds Room), Rouission Dessert Competition.

Adam has had the opportunity to work along side some of the great chefs such as; John Campbell, Mark Edwards, Phil Howard, Bret Graham and Michal Caines.

Keen to support local projects, Adam has worked closely with our local school Costello College, developing young minds into the possibilities that this industry has to offer.

Adam is a great supporter of local produce, sourcing all his own local produce and being a big supporter of Hampshire Fayre.



1 Coopers of Andover, 25.9 miles from Audleys Wood

Coopers is a specialist in fresh seafood based in Andover. They have been supplying fresh fish since 1986 and are members of Hampshire Fayre. Coopers core belief is that native species are the best for flavour and freshness and for this reason Coopers still buy the majority of prime seafood from English fishermen.

The marmalade used in the chicory tart and jams for breakfast are sourced from the Hampshire Jam & Chutney Co which has a focus on Hampshire and use some of the best ingredients the county can offer from established farms to allotment owners, the key is Hampshire.

The Moody's started cheese making in 1986 when they owned a small herd of goats but as the cheese making grew, they decided to concentrate on that side of the business and now buy in their milk for cheese making from a select herd of 100 pedigree British Saanen goats.

The wild venison we use is supplied by Eveleigh Farm Shop (and is sourced from the Salisbury plain). Eveleigh Farm Shop are a game specialist based in Salisbury and have been supplying Wiltshire & Hampshire with the highest quality game since 1975.

Jody Schechter started his organic/biodynamic farm in Hampshire to produce the best-tasting, healthiest food without compromise for himself and his family. Tunworth has a long lasting sweet, nutty flavour and a creamy texture with a thin wrinkled rind. Tunworth Cheese is made by hand in small batches in a purpose built creamery with pasteurised whole cows milk.


10. Lyburn Farm 42 miles from Audleys Wood,

Lyburn farm makes a variety of different hand made cheeses all of which are made from their own cows’ milk. Although they are pressed, these artisan cheeses are not that close to cheddar cheese. They are, in general, a softer and a more continental type of cheese with the exception of Old Winchester and Old Smales.

The original Turners Cheese was established in August 1995. The business began as an offshoot of our successful cheese making business and grew steadily. We restructured the business in 2004, in order to focus on our developing distribution business and we moved to our current site at Goudhurst, Kent.

Located in the village of Barkham, near Wokingham, Two Hoots Cheese is a small family business where we pride ourselves on producing award winning quality hand made cheese.
