Norman MacKenzie's Chocolate Truffles



Preparation method


1. Bring the cream to the boil and pour over the chocolate

2. Leave to stand for a few seconds then stir until melted.

3. Stir in the butter then the brandy and truffle oil.

4. Place in a container and set in the fridge.

Presentation


1. Use a parisienne scoop and roll into balls

2. Cover in cocoa powder and serve

Ingredients

  • Double cream 200g
  • Glucose syrup 60g
  • Dark chocolate 70-80 %
  • 410g
  • Soft Unsalted Butter 10g
  • 40ml cognac
  • White truffle Oil ¾ tsp
