The French view is that precious aromas are dissipated by early decanting, enjoying the crispness of a younger wine, whereas the British view is that time in the decanter softens & smoothes a wine, appreciating its maturity.

Cool refreshing Rose
Rosé wine can be produced in a number of different ways. The most common of these is a wine made from red grapes, crushed and bled (referred to as ‘saignee’ in the South of France) so that the juice is run off the skins after a short red wine type maceration, then fermented like white wine.

Medium bodied reds
With age, red wines tend to soften, hard edges are rounded off and aggressive tannins become supple. Often the winemaker will age the wine in wooden barrels before bottling which speeds up this softening process. This is particularly common in Bordeaux and Rioja. In fact the Bordelais contributed much to the style of Rioja wines we see today when they settled in La Rioja after their own vineyards had been devastated by disease in the 19th century. Huia Vineyards was established by Winemakers Claire and Mike Allan, who were drawn to Marlborough by the intense fruit flavours in the wines, New Ripe cherries and violets show on the nose alongside mixed spice and truffle notes. On the palate these characters meld with plum, dark berry and savoury flavours. Subtle oak and a fine tannin structure support this density of flavours.
“It has always been traditional to cellar Bordeaux wines for a number of years before drinking. The ageing allows the wines to soften, lose some of the harsh tannins and mature into the wonderful wine that Bordeaux is renowned for. Typically a Cru Bourgeois is at its optimum between five and ten years, however a first growth wine may not reach maturity for about 15 years.”
Les Tourelles de Longueville is the second wine from the famous Château Pichon Longueville Baron in Pauillac. It mirrors its glamorous relation with ripe but elegant cassis fruit. The Tourelles in the name refer to the towers which ornament each corner of the château.
The combination of muscular Cabernet with its dark berry fruit and softer, plumper, plummy Merlot is at the heart of Red Bordeaux making. Renzo Masi’s 30 hectare estate is the Fattoria di Basciano, situated in the heart of the Chianti Rufina region. Managed by Paolo Masi, this outstanding producr makes wines which are first and foremost about clean fruit and rich texture - nice dark fruit and chocolatey with smooth tannins. The predominant grape variety is Sangiovese which means ‘The Blood of Jupiter’.

Full bodied rich reds
Is it right to decant wine prior to drinking? The conventional French view is that precious aromas are dissipated by early decanting; the British view is that time in the decanter softens and smoothes a wine. There is no surprise to this as the French have traditionally drunk their wines younger, enjoying their crispness and vigour, while the British have traditionally appreciated maturity and gentleness.
The vineyards of Château La Fleur Maillet have an admirable location in Saint Emilion, bordering on the best estates in Pomerol. The Merlot grape dominates. It produces a soft wine, whereas the Cabernet Franc contributes body and a remarkable bouquet, as well as great aging potential.
Il Corto is a blend of attractive Sangiovese fruit from Rufina with 10% ripe Cabernet which is inky dark in colour and rich on the palate with dark berry fruits, with smooth tannins and some toasted oak.
A Bordeaux vintage such as 2000 comes along once in a lifetime. Not also is the year an icon for the new millennium it is also a vintage that produced scores of outstanding wines. It is generally accepted that the excellence of the year surpasses that of great modern vintages, including 1995, 1990, 1989, 1988, 1986, 1985 and 1982. In recognition of these unique qualities Hand Picked Hotels invested in the purchase of a very significant number of the wines of Bordeaux 2000. The wines were purchased en primeur and both before and since their release have been stored in ideal conditions.
